This is is an amazing recipe from a TV program by Shireen Anwar. The bread is quite easy to put together. Unlike the usual ordinary chicken filling like a grilled chicken filling, this bread recipe has a chicken filling made with white sauce. You can skip the chopped green chilies in the filling, but it does add a nice flavour.
First you need to make the dough for the bread. Then make the filling. The filling should be thick and not runny like this:
Break the dough in 2-3 balls and roll them out in a rectangular shape. Cut the sides of the rolled out dough with the help of a knife or scissor. Fill the middle uncut part with chicken filling.
Finish all the way through. Brush it up with egg wash and bake. Viola!
Here’s the recipe in detail:
For the dough
4 cups all-purpose flour
4 tablespoon oil
2 tablespoon milk powder
1 tablespoon yeast
1 teaspoon salt
1 teaspoon sugar
1 egg + another for egg wash
lukewarm water for kneading
For the filling
1 cup of boiled and shredded chicken (boil with a bit of ginger garlic paste)
2 tablespoons butter
2 tablespoons flour
1 cup milk
1 teaspoon all spice powder
1 teaspoon salt
1 teaspoon white pepper powder or use black pepper
1 green chili chopped
few leaves of cilantro chopped
Method of preparation:
In a large bowl, sift the flour. Add salt, sugar, yeast, milk powder, egg and oil. Knead with the help of lukewarm water till a soft dough is formed. The dough will be sticky at this point but do not worry. Gather the dough in a ball and throw it in the bowl after raising it a few inches. Repeat this process at least 10 times. This will give elasticity to the dough and will stop it from sticking. Let the dough ferment in a warm place for an hour or till the dough rises.
For the filling, melt butter in a saucepan. Add the onions and saute till they turn transparent. Add the flour and stir for a while. Remove pan from the flame and add in the milk. Whisk till the milk and flour mix together. Put on flame again and let the mixture thicken. This is the time when you can thicken the mixture. Add the spices. Add in the chicken and chopped green chilies and cilantro. Cook for a while and turn off the flame.
Pre-heat oven at 400 F . Make 2-3 balls from the dough and roll out each in a rectangle. Cut the sides half way through with the help of a knife or scissors. Fill in the middle and form the braid. Beat an egg in a small bowl and brush it on the bread. Bake for 25 minutes. Serve hot.
